2. Tofu Scramble
A wonderfully delicious blend of energizing tofu, vitamin C-rich zucchini, cheese and mushrooms. You begin by heating the pan with 1tbsp. olive oil and tossing in the mushrooms, sliced zucchini and a half small-sized onion, which must be finely chopped. Allow the veggies to sauté for at least 5 minutes before you add in 2/3 cup of firm tofu, be sure to cut it into fine cubed shapes. Now, let the excess water boil away before adding in 2 cups of baby spinach.
Allow the dish to wilt before you add in ¼ cup of dairy-free cheese. Let the cheese melt before you take it out on a plate.
We strongly recommend you to serve this aromatic and cheesy treat with whole grain bread, and an 8oz. serving of soy milk.
3. Meat-Lover Plate
If you’re a hardcore meat lover, you are going to love this recipe that includes all your favourite treats: eggs, bacon and polenta.
You begin by gently simmering 2 slices of premade polenta, and adding in 2 poached eggs. Then, you pile up the pan with 2 oz. Canadian bacon, and allow it to sauté gently for at least 5-10 minutes. Pile it up in a serving dish, and serve it with 1 cup of kefir mixed with half a cup of mashed berries.
