You begin by heating the pan with 1tbsp. olive oil and tossing in the mushrooms, sliced zucchini and a half small-sized onion, which must be finely chopped. Allow the veggies to sauté for at least 5 minutes before you add in 2/3 cup of firm tofu, be sure to cut it into fine cubed shapes. Now, let the excess water boil away before adding in 2 cups of baby spinach.

Allow the dish to wilt before you add in ¼ cup of dairy-free cheese. Let the cheese melt before you take it out on a plate.
